I had been considering making my own homemade almond milk for a while in an attempt to give up milk.
A couple of months ago, I tried making almond milk at home for the very first time and I was absolutely thrilled with the result. I have made it a bunch of time since and I got an overwhelming response of 100% on Instagram poll, wanting to know the recipe. So here it is.
Recipe:
1.Soak the almonds in water for 1-2 days:
The almonds will soak the water and become plump. The longer the almonds soak, the creamier the almond milk. However, do not let them soak for over 2 days.


2. Drain and rinse the almonds:
When the almonds are soaking in water, you?ll notice that the colour of the water changes- it gets slightly muddy. This is the acidity the almonds give out. When you have finished soaking the almonds, draining this water and rinse almonds under cold running water.


3. Add the almonds and water in a blender
To make almond milk, you need to add the almonds and water together in blender. The ratio for water to almonds depends on how thick and creamy you want your almond milk to taste.

The more water you add, the thinner the almond milk will be. I use the ratio of 2 cups of water for 1 cup of almonds.
However, I start by adding only 1 cup of water first.

4. Blend Blend Blend:
Pulse the blender a few times. This will help break up the almonds. Then blend the almond for 2- 3 minutes.

After 1 minute, stop blending to check the consistency. The mixture should be of porridge like consistency.
Add the second cup of water and some honey to taste and blend for another 1-2 minutes. In the end, the water should turn white- like milk.

I added a bit of honey at this stage for some additional taste. You can also do this step in the end, but I wanted a little bit of sweetness to be really well blended in the milk.

5. Strain the almond milk using a cheese cloth:
Place the cheese cloth over a big mug (I used my big plastic measuring cup) Pour the almond mixture through the cheese cloth in the cup.

6. Squeeze out all the almond milk from the almond mixture:
Gather the cheesecloth around the almond mixture and twist close. Squeeze and press to extract as much almond milk as possible.

7. Enhance the sweetness as per taste:
Add 3-4 drops of vanilla essence and stir, to further enhance the taste of the almond milk. This is totally optional.
An ta-da! Your Almond milk is ready.

Almond milk lasts only about 2 days, so its better to only make as much as needed. After all, you can now treat yourself to this yummy drink any time you want!
