As a student at 21, just having moved to the UK and living by myself for the very first time, I did not know much about cooking. This chocolate mug cake was one of the first things I learnt to make by myself. Hence, I wanted it to be the first recipe I shared.
Over the years, I have tweaked the ingredients and their proportions to make the cake how I like it and it always amazes me how an extra pinch of something or a not adding a spoon of something else can make such a difference in the final cake.
One portion of this chocolate mug cake is perfect for two people to share or for one if you are feeling very gluttonous (like I have many times). This mug cake is perfect when I have a sweet craving and I’ll admit that there have been times, back in the day, when it used to replace dinner.
Ingredients:
3 Tablespoon Drinking Chocolate Powder
2 Teaspoon White Sugar
2 Tablespoon All Purpose Flour
1 pinch Baking Soda Powder
2 Generous tablespoon Nutella
1 Tablespoon Vegetable oil
1/2 Teaspoon Vanilla Essence
1 or 2 Egg(s). (Add 1 egg is you if want a brownie like consistency or add 2 eggs for a more cake like, fluffier consistency.) For this cake, I have added only 1 egg.
How to make:
Step 1: Add oil and make sure it greases the cup.
Step 2: Add all the dry ingredients- drinking chocolate powder, flour, sugar and baking soda powder and mix well.
Step 3: Add all the wet ingredients- Nutella, vanilla essence and egg. Mix everything until the mixture is smooth.
Step 4: Microwave for 1.5-2 minutes. The cake will rise in the mug like a souffle. Once it rises above the rim of the mug, the cake is ready.
